The Mary One

A cocktail to bridge the courses

utch World Class Bartender, Ivar de Lange brings out the best in a Bloody Mary with his recipe, The Mary One. He makes this drink with homemade artichoke-infused Ketel One vodka and a tomato jam (sourcing both the artichoke and tomato from a nearby farm).

The Mary One

  • 40ml Artichoke-infused Ketel One vodka (see instructions below)
  • 2 bar spoons tomato jam
  • 10ml Fresh Lemon juice
  • 2-3 drops red pepper bitters
  • Traditional jam jar
  • Celery stick
This cocktail serves as a bridge between courses to cleanse and refresh the palette.

How to make it

To make the artichoke infused Ketel One, Ivar boils the heart and 25 leaves of a ripe and fully-grown Dutch artichoke for 30 minutes to get the juices out. He then peels the leaves, cuts the heart out and lets them rest in a litre of Ketel One vodka for 48 hours. Finally, he strains the liquid through a fine milkcloth into a bottle for storage until use.

For the cocktail, place all the ingredients into a shaker with ice. Shake well and strain into a small traditional jam jar (Kilner-style). Garnish with a stick of celery and serve on a Grandma-style napkin
