Dare we say love?
s spring eases into summer, gardens thrive and berries are at their peak. Relive those simple, lazy days when your biggest worry was the berry stains on your fingertips with our rendition of the strawberry daiquiri. And incidentally, this could be the ideal cocktail to drink while watching a match or two at Wimbledon.
Borrowing from some of summer's sweet abundance, we've revitalised a classic cocktail, the daiquiri, by muddling in fresh strawberries. The bright citrus notes from the lime juice complement the strawberries’ sweetness. Add Zacapa 23 rum , with its vanilla and caramel tones, and a dash of bitters, for a real game changer.
How to make it
Gently coat the rim of a cocktail glass with a lime wedge. Cover a saucer with a thin layer of super fine sugar and roll the outer rim of the cocktail glass through the sugar. Set aside.
In a cocktail shaker, muddle the strawberries with the simple syrup until well pulverised. Add the rum, lime juice, and bitters to the shaker. Add a couple handfuls of ice to the shaker, cover, and shake vigorously for 15-20 seconds. Use a Hawthorne strainer to strain the cocktail into the prepared glass. This type of strainer will allow some of the berry pulp into the cocktail to create an interesting texture and flavour.
