Cream plus spice equals more than nice.
hose who enjoy a fine rum after dinner--rejoice. The A&J team did some careful pairing with the help of author and cheese expert, Patricia Michelson of La Fromagerie, to find the ideal match for this sugar cane-based spirit. In our pairing sessions, we soon realised that the caramel, toffee and spiced notes of our favourite fine rums called for triple cream or washed rind cheeses.
If term washed rind makes you scratch your head, don't worry, we asked the same question. It turns out that washing the rind of an otherwise creamy cheese brings out the cheese’s pungency and spiciness. In addition, washing the rind adds a depth of earthiness and tobacco to the creamy texture. That makes a washed rind cheese aromatic enough to stand up to the warmth and spiciness of fine rum.
Our recommended pairing:
Zacapa XO rum neat with Little Colonel washed rind cheese and Sharpham Goat Brie.
Why Little Colonel: This washed rind cow cheese enhanced Zacapa XO’s sweetness and managed to highlight other dimensions of the spirit. Both the cheese and the rum became nuttier and sharper, with deeper spice notes.
Why Sharpham Goat Brie: The flavour notes of the cheese are quite apart from the notes in Zacapa XO, however they managed to bring out the coffee and cacao dimensions of the rum quite nicely. The cheese's dryness balances the sweetness well.
We recommend experimenting with a range of rums, triple cream and washed rind cheeses to find your preference.
